Healthy Spaghetti

Hello Yoga Lovers!


Today's recipe is for pasta lovers. It is very easy and you need only five ingredients. Hope you will enjoy it!



Ingredients for two portions:

  1. 150g spaghetti

  2. 4 garlic cloves

  3. 200g kale or spinach

  4. 30g parmesan cheese

  5. 30g ricotta cheese



Directions:

  1. Cook the spaghetti in salted water according to the package directions.

  2. Peel the garlic cloves and cut the sprouts from kale or spinach.

  3. Add the leaves and garlic in the water of spaghetti for 5 minutes.

  4. In a blender, add 1 ½ t.s. virgin oil and grated parmesan cheese. With a pair of tweezers, transfer the leaves and garlic into the blender. Blend for a few minutes until the mixture is smooth. Try it and see if you need additional salt and pepper.

  5. Strain the spaghetti and keep a bowl of preheated water.

  6. Add back the spaghetti to the pot together with the green sauce. If you need, add some of the water that you kept.

  7. Divide the spaghetti into plates and add the ricotta cheese above.
